Lettuce Wrap Shrimp Tacos

The weather is heating up for summer, and our cravings for summer tacos has been at an all-time high (we know yours has, too!)
Here is one of Simone's favorite summer recipes - thanks to Kelly LeVeque.

Lettuce Wrapped Shrimp Tacos
Ingredients:
6 Wild Shrimp
1 tbsp Taco Seasoning
2 tbsp Primal Kitchen Mayonnaise
Juice of ½ Lime
2 cups Napa Cabbage
1 tbsp Avocado Oil
6 Butter Lettuce head
½ Avocado
2 tbsp Cilantro
In a medium bowl, coat the shrimp with taco seasoning. In a large bowl, mix the mayonnaise with the lime juice and whisk until thinned. Add the cabbage and mix to coat. In a large skillet, heat the oil over medium heat. Add the shrimp and cook until pink and cooked through, 4-5 mins. Place the lettuce leave on a plate and use them as taco "shells," layering in the shrimp, slaw, avocado, and cilantro. Squeeze the lime ledges on top and serve.
